If you happened to read my post last week on how we were “instapotting” before it was cool, then you know I promised many more simple meals that we use our electric pressure cooker for around here. 😀
Today is one of those days.
My kids love this meal for lunch, and I love that it uses up leftovers and rocks their socks off. 4 ingredients. 4 spices. and about 20 minutes later after pushing the button you have something everyone loves to eat.
Seriously, #momforthewin on that one.
So if you are looking for a simple, delicious, gluten free meal with little to no food triggers that can fill those hungry bellies and make a good meal, then this is your recipe. 😀
Let me know when you make it and if you changed anything. We make this meal a lot after holidays when it seems like we have a ton of ham and everyone gets sick of ham sandwiches. (however, we also chunk up that ham and stick it in the freezer for meals such as this…mouths watering while we do so! *wink)

Hawaiian Rice Dish
3 cups Jasmine rice
2 cups Pineapple with juice
2 cups diced ham
2 cups water
1 tsp salt
pepper liberally sprinkled on top
1/2 tsp garlic powder
1/8 cup molasses or dark brown sugar (optional)
To make this, all you have to do is put the ingredients in in the order they are listed. Then stir until everything is well mixed. Put your electric pressure cooker on RICE setting (for mine that is 8 minutes on rice setting, but each one is different, just follow that setting for yours). Allow to run through the setting, wait 5 minutes after setting is done, and then manually release the pressure. Serve immediately.
If you want to shorten the time of the process with your cooker, be sure to use warm water instead of cold when adding the water.
